You are probably right that it is possible to use the part in an analog NXT sensor (or a NXT/RCX sensor). 

But at least for me, these I2C chips are easier than doing analog interfacing.

I don't think the I2C part is needed here.
Since the output voltage is 5V, which is exactly what the RCX needs, it should be easy to build an RCX-compatible sensor and use it with the legacy analog input on the NXT (and possibly with an RCX :-).
